 三彩大虾是 [[ 广东省 ]] 的传统名菜,属于 [[ 粤菜 ]] 系。先将大虾去掉外壳留虾尾,由脊背抽去泥肠,用刀从背部批开,腹部相连,剖上十字花刀,加盐、味精、绍酒腌渍入味。面包切成上宽5厘米、下宽3.5厘米、长10厘米、厚0.6厘米的片共10片。比目鱼肉和猪肥肉膘分别剁成细泥、同放碗内加葱、姜末、鸡蛋清、绍酒、精盐、湿淀粉调匀成馅。 [[ 冬菇 ]] [[ 火腿 ]] [[ 香菜 ]] 梗分别切成末。在面包片上抹一层蛋黄,虾肉片沾一层薄面粉,再挂上蛋清(虾尾不挂糊)。虾肉皮朝下贴在面包托上,再将鱼肉馅在虾片上抹平,随后在鱼馅上放一行香菜末,中间放火腿末,第三行放冬菇末,略按一下,即制成“三彩大虾”,炒锅内加花生油,中火烧至六成热(约150℃)。将制成的“三彩大虾”放入炸至两面呈金黄色时捞出,沥尽油,改切成条状。原样摆入盘内,食用时外带花椒盐、辣酱油佐食。
